Chicken and Feta bake

This is a really easy to prepare dish and so tasty. Chicken thighs placed on thinly sliced new potatoes and baked for around an hour. Top with baby plum tomateos, black olives, crumbled feta and a quick slug of red wine vinegar. Pop back in the oven for around 30 mins and serve. Great with some steamed broccoli or chilli garlic wilted spinach.
